Chicken nihari gives you the deep, spiced, glossy gravy of beef nihari in a fraction of the time. It fails when the masala tastes raw, the chicken dries out or the gravy turns lumpy. This method blooms the masala in ghee, simmers the chicken gently and thickens with toasted atta for a silky finish.

Fry the onion

  1. Heat ghee and fry sliced onion until golden.
  2. Lift out half the onion for garnish.
Look for: deep golden onions, not dark brown.

Bloom the masala

  1. Add ginger garlic paste and fry 1 minute.
  2. Add nihari masala, chilli, turmeric and a splash of water and fry until fragrant.

Sear and simmer

  1. Add chicken and salt, fry 5 minutes.
  2. Pour in hot water, cover and simmer gently. Use the gauge above.

  1. Whisk toasted atta into water until smooth.
  2. Pour slowly while stirring and simmer until glossy.
