Mutton Karahi Recipe (Restaurant Style Lamb Karahi)

Cook mutton first. Tomatoes on high. Ginger and pepper finish.

Farwa ZeeshanRecipe by Farwa ZeeshanTested in the NineFoods home kitchen

Mutton karahi is the dish Pakistanis order at every highway dhaba: tender bone-in mutton in a thick tomato masala, finished with ginger and green chilli. At home the meat stays tough while the tomatoes burn. The fix is cooking the mutton covered in its own juices until tender first, then adding tomatoes and bhuno-ing on high heat.

Recipe developed and tested by Farwa Zeeshan, who cooks and tests every NineFoods recipe on a regular home stove.

  • Cooked from start to finish with the exact quantities above for 4 servings, using both the metric and US cup measures.
  • Every one of the 3 stages was timed at the stove; heat levels and the 'look for' cues are what we saw in the pan.
  • The doneness check (is the mutton tender) and the troubleshooter come from batches that went wrong, and how we fixed them.
