Fesenjan Recipe (Persian Pomegranate Walnut Stew)

Toast the walnuts. Grind them fine. Cook until dark.

Farwa ZeeshanRecipe by Farwa ZeeshanTested in the NineFoods home kitchen

Fesenjan is the Persian party stew: chicken in a thick sauce of ground walnuts and pomegranate molasses, sweet, sour and nutty. It goes wrong two ways: pale and gritty when it is rushed, or oily and bitter when the walnuts burn. The fix is gently toasting the walnuts, grinding them fine, and simmering long enough for the walnut oil to rise and the sauce to turn deep brown.
