Faloodeh Shirazi Recipe (Persian Frozen Rose Noodle Dessert)

Thin rice noodles. Scrape as it freezes. Lime to serve.

Farwa ZeeshanRecipe by Farwa ZeeshanTested in the NineFoods home kitchen

Faloodeh shirazi is the oldest frozen dessert in Iran: thin rice noodles set in rosewater syrup and frozen into a crisp, icy slush, eaten with lime juice and sour cherry syrup. It sets into a solid block when it is not scraped. The fix is a light syrup, very thin rice noodles cut short, and scraping the mix with a fork every 30 minutes as it freezes.

Recipe developed and tested by Farwa Zeeshan, who cooks and tests every NineFoods recipe on a regular home stove.

  • Cooked from start to finish with the exact quantities above for 6 servings, using both the metric and US cup measures.
  • Every one of the 3 stages was timed at the stove; heat levels and the 'look for' cues are what we saw in the pan.
  • The doneness check (is it the right texture) and the troubleshooter come from batches that went wrong, and how we fixed them.
