Albaloo Polo Recipe (Persian Sour Cherry Rice)

Cook cherries to syrup. Layer, then streak. Keep it tart.

Farwa ZeeshanRecipe by Farwa ZeeshanTested in the NineFoods home kitchen

Albaloo polo is jewelled Persian rice streaked pink with sour cherries, served at weddings with saffron chicken or little meatballs. It turns soggy and too sweet when the cherries and their juice go straight into the rice. The fix is cooking the cherries with a little sugar into a thick syrup, layering them in, and spooning the syrup over only at the end.

  • Cooked from start to finish with the exact quantities above for 6 servings, using both the metric and US cup measures.
  • Every one of the 4 stages was timed at the stove; heat levels and the 'look for' cues are what we saw in the pan.
  • The doneness check (is the cherry syrup ready) and the troubleshooter come from batches that went wrong, and how we fixed them.
