Kaleji Masala Recipe (Spicy Liver Fry)

Clean well. Salt at the end. Cook fast.

Farwa ZeeshanRecipe by Farwa ZeeshanTested in the NineFoods home kitchen

Kaleji masala is spicy fried liver, a classic on Eid morning. It turns hard and rubbery when it is overcooked or salted too early. The fix is cleaning the liver well, building the masala first, cooking the liver for only a few minutes and adding salt at the very end.
